I have to collect information from several different sources so please bear with me while I get this all figured out.

Kibble Recipe: 1 Lystro Egg, 3 Fiber, 2 Tintoberry, 1 Rockarrot, 1 Cooked Prime Meat or Prime Meat Jerky
Saddle level: 30-35
Saddle materials: 850 Hide, 600 Fiber, 250 Wood, 200 Metal Ingots (Crafted at: smithy)

Training Dummy
Engram Level: 15
Materials: 500 thatch, 80 wood, 500 fiber, 10 hide

Swamp Fever Antidote: 40 Rare Flowers, 40 Rare Mushrooms, 20 Leech Blood, 5 Rhino Horns, crafted at Chemistry Table
Lesser Antidote: 10 Rare Flowers 10 Rare Mushrooms 1 Rhino Horn 10 Leech Blood, crafted in Mortar & Pestle

Swamp Fever: 20% reduced stats and no stamina regen, is contagious, can be transmitted between players and animals. Is not 'cured' with death. Hatchet is the most effective way to get leech blood. Diseased leeches drop the most blood.

Plant X fertilizer per shot: 50

So far I've located Diploducus around the red river south of the snow biome, the conspicuously predator packed river in the southeast and at Pearl Lake.
Edit: Have found some more near the red lake near green obelisk

Leech spawns seem rather inconsistent, but they always spawn more than one. They tend to spawn in spots where the water is just a little bit deeper, but don't take that as a "they only spawn in slightly deeper". I just can't quite notice any patterns besides them liking deeper water.

It should be noted that Diseased Leeches also receive some stat buff- most notably speed. They also drop a considerably larger amount of Leech Blood than normal ones.

As of 242.1, the kibble recipe uses Mejoberries.

In addition, Diplodocus can be KO tamed or passively tamed.
